4 /5 KG: We were early for our reservation at The Hatch, so we decided to grab a quick drink here instead. Love the vibe at Della’s. They got a fun, easygoing energy! After a full day of wine tasting, it was refreshing to switch things up with something stronger. Sorry I didn’t catch our bartender’s name, but she was fantastic, super friendly and attentive! Funny enough, I actually bumped into her the next day at the Garagiste Festival, which made the whole experience even more special. She also mentioned that Della’s and The Hatch share the same owner, no wonder both spots have that same welcoming charm. This place is an easy favorite. We’ll definitely be back next time we’re in town!

The atmosphere really nailed it: fun, lively, and energetic without being too loud or overwhelming. It struck the perfect balance for conversation and enjoying the moment. Huge shoutout to the bartender—super friendly and genuinely fun to chat with—and to Chris, the host, who was welcoming, engaging, and set the tone right from the start. This spot checks all the boxes. We’ll absolutely be back and would highly recommend it to anyone looking for great food, great drinks, and a great vibe in Paso Robles.

5 /5 Tabnie Dozier: Maggie has an awesome spirit and a gorgeous smile! We both realized we had Kentucky connections too! Her kitchen deserves endless applause and so does the bar. Her friendly energy and love for Paso shined soooo bright. I look forward to seeing her again the next time Im in town and you should definitely visit Dellas and taste the deliciousness for yourself.

3 /5 Don Lee: ⭐️⭐️⭐️ 3-Star Review I recently dined at Della’s Wood-Fired Pizza & Cocktails and came away with a mixed impression. The service was fine—friendly and attentive enough—but the food didn’t quite live up to expectations. The chicken wings were concerning, as they appeared undercooked. We were told they’re prepared sous vide, but the texture still didn’t inspire confidence. The pizza itself was slightly burnt and under-seasoned, which was disappointing given the wood-fired focus. The biggest letdown, however, was the pricing on drinks: a $5 fountain soda with no refill, followed by an additional $5 charge for a second one. That felt excessive and left a sour note at the end of the meal. Overall, it’s an okay spot with potential, but between the food execution and the drink pricing, it lands squarely at 3 stars for me.
