Edwin Hands down, this is the best pasta bar I’ve tried. Everything looks simple at first glance, but every dish is cooked to order and absolutely perfect. Watching the chef work the open kitchen is part of the fun, you can really see the care and precision that goes into each plate.
The cacio e pepe was unreal. Finished in the cheese wheel, with the melted cheese clinging perfectly to the pasta, rich, creamy, and so satisfying. The ragu looked pretty humble, but once it was tossed with that perfectly al dente pasta, the depth really came through. You could taste how long that meat sauce had been slowly cooked down, deep, savory, and full of flavor.
Such an awesome lunch spot overall, and I’ll definitely be back for more.
