This is one of those stories that makes you believe in perfect timing.
I was on my way from McAllen to San Antonio, driving through unfamiliar towns, and I happened to be passing through Premont. I didn’t even realize where I was until I started Googling, “Where is Premont?” and sure enough, I was already in it.
Right then, out of nowhere, my buddy Isaac messaged me. He said you wanted to catch up and added, “If you’re ever in Premont, you’ve got to stop by.” He had no idea I was already there. Total coincidence — or maybe something more.
Earlier that morning, I had sent my girlfriend a photo of a brisket sandwich for breakfast. She replied with a picture of one, and that instantly made me hungry. Fast forward a bit, I meet up with Isaac at his ranch — and without me saying anything — he tells me, “You have to go down to Gonzolitoz and try their brisket sandwich.”
I didn’t mention food, brisket, or even that I was hungry and yet that’s what he said.
It felt like the whole moment was meant to happen, like I was being led to this exact experience.
And let me tell you, that sandwich? It was absolutely next level. Smoky, tender brisket, loaded with flavor, topped with pickles, jalapeños, onions, sauce! Every bite hit like a reward from the universe. This wasn’t just a good brisket sandwich… it was the best I’ve ever had.
So if you’re ever driving through South Texas or even remotely near Premont do yourself a favor and go to Gonzolitoz and do what I did ask them to make the best brisket sandwich you’ve ever had. This place isn’t just food, it’s a whole experience waiting to happen.
